I’m so happy to welcome a friend I’ve made, Leigh Ann, and feature this guest post from her usual writing space at My Diary of Us. She’s a southern girl originally from Tennessee with a love for food, travel, and boho fashion (and wine – how can I be friends with someone who

Aside from making me want to pack up and move to Louisiana for fresh blueberries and crawfish, she often posts just for the obvious love of writing – which of course, I love. After all, isn’t that why we all started our blogs once upon a time? She’s been kind enough to share this amazing looking summer salad recipe on The American Mama. I love salad, because really who doesn’t? It’s kind of a staple in my house and goes on rotation every week, which means I have to get creative with it otherwise I would get sick of eating salad. And let’s be honest, no one likes a boring salad, especially if you have any hopes of getting husbands and kids to join in on the salad love. One of my favorite ways to fancy up a salad and make it extra delicious is to add whatever seasonal fruit that I have on hand into the mix. Right now that happens to be a whole lot of summer melons.
My farmer’s market is exploding with delicious cantaloupe and watermelon varieties, and I always have some sliced and ready to go in the fridge for healthy snacking. This particular salad was a happy accident and one that I have continued to make about a thousand times since.
I might be slightly obsessed with it…
It is so delicious guys. I mean, is it sad that, I get sad when I am done eating it? The flavors scream summertime and it’s the perfect balance of flavors and textures. It’s slightly sweet from the cantaloupe, crunchy from the cucumbers and almonds, creamy from the goat cheese, the dill is a magical addition (yes magical), and it gets a tang from the vinaigrette. It’s basically a party for your taste buds and it happens to be super healthy and good for you too!
And really what more could you want from your salad? Just do yourself a favor and go buy a cantaloupe and make this salad so that I am not alone in this love affair.
What I love about this salad is that the formula works, so if there are any ingredients that you aren’t a fan of, you can easily swap them for ones that you do like. It’s really all about the textures and balance of sweet vs. salty etc. Easy as that!
